Irish Soda Bread

6 cups flour
2 tsp baking soda
2 tsp baking powder
3 tblsp cornstarch
2 tsp sugar
1 tsp salt
2 1/2 cups buttermilk

Preheat oven to 375 degrees
Add all ingredients in a large bowl & mix well. Pour all of the buttermilk into the bowl at once and stir using a wooden spoon, just until a soft dough is formed. Knead for a couple of minutes. Divide the dough into 2 portions and shape each into a round loaf pressing the top down a bit to just barely flatten it. Place the loaves on a large ungreased baking sheet. Sprinkle some additional flour on top of each loaf and using a sharp knife, make the sign of a cross in the top of each loaf. Allow loaves to rest for 10 min, bake on the middle oven rack for 40 min or until golden brown.

Welcome to the home of the 35th Indiana Civilian Re-enactors. We are a group of living historians based in Central Indiana with ties to the 35th Indiana Infantry "1st Irish" re-enactors.
